All three of these spice rubs will work on any Carmen Creek Gourmet Bison Steak. Rub on both sides of steaks and let sit for 20 minutes at room temperature before grilling. The secret to a great spice rub is not the number of ingredients, but the balance and selection of herbs.

As dried ingredients,these spice rubs can be stored in glass jars with tight fitting lids for up to 6 months. Recipes easily double or triple.

Kick Up Your Heels Spice Rub

  • 1 tsp. ground dried chipotles
  • 1 tsp. ground black peppercorns
  • ½ tsp. ground allspice
  • 2 tsp. red chili powder
  • 2 tsp. ground, cumin
  • 2 tsp. ground coriander
  • ¼ cup ground paprika
  • 1 tbsp. sugar
  • 1 tbsp. coarse ground sea salt

Yield: ½ cup, enough for six (8 oz.) steaks

Our Favorite Spice Rub

2 tbsp. of each of the following:

  • ground cinnamon
  • ground nutmeg
  • ground paprika
  • ground cayenne
  • garlic powder
  • onion powder
  • oregano (dried)
  • thyme (dried)

Yield: ¾ cup, enough for six (8 oz.) steaks

Five Spice Savory Rub

  • 1 tbsp. lemon pepper
  • 1 tbsp. garlic salt
  • 1 tsp. cayenne
  • ½ tsp. ground, dried rosemary
  • ¼ tsp. ground, dried thyme

Yield: ¼ cup, enough for 2 large or 3 small steaks
