This sauce is a perfect balance to steaks marinated in the Honey Ale Ginger Lime Marinade. The flavors merge to create a very creamy, bold, tangy flavor.


  • ½ cup white wine
  • 1 shallot, finely diced
  • 2 tbsp. crushed black peppercorns
  • 1 ¾ cup chicken stock
  • 1 ¾ cup beef stock
  • ½ cup whipping cream

This recipe will yield 2 cups of sauce, which is enough to drizzle over 8 steaks.

To assemble

  1. Bring wine, shallots and crushed peppercorn to a boil in a medium sized saucepan.
  2. Reduce heat to simmer until the mixture is reduced by ½  (this takes about 5 minutes).
  3. Add beef and chicken stock and boil until reduced to 2 cups. This will take about 25 minutes.
  4. Add whipping cream and cook at low heat until sauce coats spoon (about 6 minutes).
  5. Remove from heat and drizzle over cooked steaks.
